How many routes can I save?

Up to 10, and on smaller iPhones fewer than that.
The reason is the row of page dots at the bottom of the screen that lets you swipe between your saved routes. Those dots are accessibility and navigation affordances that have to stay big enough to tap comfortably, so the number of routes the app allows is worked out from how wide your screen is. On a Pro Max you’ll get the full ten; on an iPhone SE or mini you’ll get fewer.
Remember that a route is a pair of stations in one direction. If you want your trains home as well as your trains to work, that’s two routes, not one. Same if you need to change trains - each leg is its own route, because the app only shows direct trains.
If you’re hitting the limit, it’s worth pruning routes you added once and never look at - the app is designed around the two or three journeys you actually make regularly, and it gets more useful the fewer things you have to swipe past.
